Gourmet Chicken Burger

Ingredients:

  • 2 Chicken Thighs

  • Peri Peri Seasoning (To your liking)

  • 1 Turkish Bread Roll

  • 2 Pieces of Bacon (Large round short cut is ideal)

  • 2 Slices of Cheddar Cheese

  • 1 Avocado

  • Small Bag of Mixed Rocket & Spinach

  • BBQ Sauce (To your liking)

  • Garlic Aioli (To your liking)

Instructions:

This burger was cooked on the fire pit grill.

  1. Before leaving on your trip place the chicken thighs into a zip lock bag and coat in the Peri Peri seasoning, return to fridge.

  2. Take Chicken out of bag and place on the grill.

  3. Once chicken is 3/4 cooked place the 2 pieces of bacon on the grill.

  4. When the chicken is cooked remove from grill and place on your board to rest.

  5. On the final turn of the bacon, place the cheese on top of the bacon to melt.

  6. Slice the bun down the middle long ways and place face down on the grill.

  7. Once the bun is toasted remove all remaining elements from the grill and return to your cooking table.

Now its time to build your burger:

  1. Slice the avocado in half and use the half without the seed. Slice it multiple times long ways then a couple of times sideways then mash with a fork.

  2. Spread the mashed avocado on the bottom of the bun evenly.

  3. Place the 2 chicken thighs on top of the avocado.

  4. Place the bacon & cheese on top of the chicken.

  5. Spread a healthy serving of the garlic aioli across the lid of the bun.

  6. Place 2 handfulls of rocket & spinach on top of the aioli.

  7. Spread a generous serving of bbq sauce across thetop of the bacon & cheese.

  8. Place the lid on the rest of the burger.

    And the most important part, cut the roll on a 45 degree angle to make it a gourmet burger!
