Prawn Cocktail Burger

Ingredients:

  • 500gm’s raw prawn meat.

  • 600ml vegetable oil.

  • 1/4 snap lock bag of plain flour.

  • 4 tablespoons mayonnaise.

  • 1 tablespoon tomato sauce.

  • 1 teaspoon balsamic glaze.

  • Pinch of pepper.

  • Packet of instant batter.

  • 250ml of water

  • 3 Coz lettuce leaves

  • Brioche Bun

Instructions:

  • Place mayonnaise, tomato sauce and balsamic glaze into a bowl and mix together. Taste and add more ingredients to your liking.

  • Pour half the packet of instant batter into a bowl and add water, mix until consistency is reached adding in ingredients as required.

  • Pour vegetable oil into a deep pot or saucepan and heat to 180 degrees.

  • Place half a dozen prawns into snap lock bag and coat with flour then dip into batter mix. Once fully coated drop into hot vegetable oil. Rinse & repeat until all the prawns are cooked. Place prawns on a plate with some paper towel each time to drain all excess oil off.

  • Once all the prawns are cooked, toast the bun in a frying pan or on the fire grill.

Build Your Burger:

  • Spoon a healthy amount of seafood sauce onto the bottom half of your bun.

  • Place the coz lettuce on top of the sauce.

  • Place as many prawns as you like on top of the lettuce, 4 or 5 is a good number.

  • Spoon another healthy amount of seafood sauce on top of the prawns and place lid on top.

Your burger is now ready to serve but make sure you add the bowl of sauce and the rest of the prawns to your board to share with your mates.
